Nightclub AC - need help

Hi guys need help

I don’t know much about AC

My venue main room is 1200sf

We have 200 ppl capacity

We have put up sixteen 20” industrial fans and
one 5 ton AC unit.

The unit is

Fan coil unit listed: 612T
Model # AP60CX21B
Serial # W1F7868776

Model # YCD60B21SA
Serial # W1M7260223

When putting a digital thermometer at the front of the AC when the thermostat is set to 10deg Celsius = 11.4/5 Dec Celsius reading. - this is to an empty room.

When 200 ppl in the room dancing it’s 30 deg in the room.
Unbearable and sweaty and uncomfortable.

And it’s still spring not hot summer yet
ItÂ’s hot and unacceptable and costing me Business

I had a Ac guy in who said will cool the room no problem and did shitty work and ghosted us.
I got a new AC guy in fixed the coolant and pressure from previous guy and last night was our first night with it. It’s cold at the point it blows out but the room is still 28th Celsius.

I don’t know Much about this and would appritiate your expertise.

I need my venue 16-18 deg Celsius on a 30 deg celicus day.

I’m limited to what we can do.
WeÂ’re a basement underground location
With two 2’x2’ cut outs in the concrete wall to outside which has wood planks covering it.
The ac is taking up one.

How much AC do I need ?
Is this enuf and it’s not working correctly cuz new ac guy thinks so but he didn’t instal it so he doesn’t know either. And neither do I we just want it to be perfect.

Also it was recommended To me to add a Hydroponic air pump Industrial fan
- essentially a hydroponics equipment Grow op fan
- Pulls out so much hot air creates a negative air pressure
I was told by another venue owner this would solve our problem ? Idk thoughts ?

Open to any and all suggestions.

I need to solve this problem asap as
It’s making my Guests uncomfortable and we
Need to solve it as it’s costing me Money.

Using the roof is not an option.

Thank you for your time.
